One of the questions I get asked the most is what I feed Raeleigh? When people find out she’s vegan, they are always kind of surprised, and then they want to know what I feed her. It does make it a little tricky because she’s too little to eat salads (which I could live on), and even things like Rice bowls are a little hard for her still. She’s got 6 teeth now, but she’s a bit of a lazy eater, and she’s been fairly picky as of late which is super frustrating! haha
But, I’ve compiled a list of things that she’s eaten at one point or another! And I will highlight her faves ๐
A lot of these recipes call for protein powder. The only brand we use is Garden of Life. I have no affiliation with them, we just really love their stuff. But any time I mention protein, that’s what we’re using.
SMOOTHIES
She isn’t super picky with smoothies, she likes most of the ones we make she just has to be in the right mood. And our smoothies are always jam packed with things so it’s awesome if I can get a little smoothie in her every day ๐

PROTEIN PANCAKES

We have these regularly. They’re definitely one of her faves. Super simple, too.
– 1 cup oats
– 1 scoop vegan protein
– 1/2 banana
– 1 tsp nut butter
– as much almond milk as you need to make it blend!
– This should make 5-6 cakes, depending how big you pour them. Be patient, they take a little bit to cook ๐

PB BANANA MUFFINS
These are a staple (that I actually haven’t made in a while and need to)

PROTEIN OATS

– 1 cup oats
– 1 scoop vegan protein
– 1 tbsp nut butter of choice
– 1 tbsp flax
– 1 cup frozen fruit of choice
– top with vegan yogurt and cacao nibs
(this pic has zucchini and banana in it instead of 1 cup frozen fruit which is also an option!)
** note: when I make her oats of any kind or even smoothies, I will often put in flax, chia, hemp hearts or a mix of these. They’re a great source of healthy fats, omega, protein and they help keep her full longer!

BAKED OATS
This is pretty similar to the pancakes and protein oats, just in a different format

-1 cup oats
– 1/2 mashed banana
– 1 scoop vegan protein
– 1 tbsp coconut oil or nut butter
– optional add ins: cinnamon, vanilla, pinch of salt
– Bake at 375 for 18-20 mins

PUMPKIN OAT COOKIES


The easiest cookie recipe ever. So quick to whip up and they’re really nutritious and filling, too!
– 3 cups oats (or a mix of oats and quinoa flakes like I like to do!)
– 1 1/4 cup pure pumpkin pure
– 1/2 cup apple sauce or 1 mashed banana
– a small amount of almond milk if mixture is too dry
– Optional add ins:
> 1-2 scoops vegan protein
> maple syrup, agave or stevia (a heads up these are not sweet… so if you like things. a little sweeter I would add one of the following)
> cinnamon, vanilla, chocolate chips/cacao nibs, walnuts
In the pic above, I added protein, cacao nibs, a few vegan choco chips, cinnamon and some crushed walnuts!
As you can see, anything Oat based is a big win with her

TOFU SCRAMBLE
Pretty much you can do any mix of veggies in this. For this one, I did the pre riced PC mix of Kale, Zucchini and Broccoli. But pretty much I always do quinoa, tofu or tempeh, lentils or chickpeas, and some veg of some kind. And Raeleigh actually loves the spice!

VEGAN BUFFALO CHICKPEA QUESIDILLA
OMG these were SO freakin delish,. Rae loved them and so did Greg and I! The cashew ‘chz’ sauce is so good. I made a second round (subbed out some of the cashews for some zucchini) and made her quesadillas all week long. She’d eat anything if it was in a dilla with this chz sauce! Loved it so much!


My mom and mum in law have both been making different versions of this has been making this soup for us and it’s been such a hit. I LOVE it and so does Raeleigh. The recipe I linked here is vegetarian but can easily be made vegan by swapping the cheese and yogurt for plant based choices.

OMG this was so good and I need to make it again, immediately. Raeleigh also LOVED it. She wanted to eat it on it’s own… I managed to get a little apple in there with each bite. haha

These have been a favourite for a while! Years actually. They’re pretty easy, super nutrient rich and super delish.
There are a few other things worth mentioning that she loves that I don’t have pics or recipes for.
– hummus. Absolutely LOVES it. Any kind, on anything, or just on it’s own
– avocado. She’s been on and off with avocado, but she’s back on. It’s pretty easy to spread some on ricecake or sourdough with a little salt and pepper. Yesterday I mashed one up and stirred in some quinoa and lentils with hot sauce (yes, hot sauce)
– nut butter. especially loves coconut PB spread
– baked sliced apple
