This recipe is one that was recommended to me from my lovely friend and kick @$$ chef Morgan. I was always coming into the kitchen around 2:30pm or so, complaining that I was hungry, but I didn’t know what I wanted.
She got sick of me complaining and never having any direction at all in terms of snacks, when we literally have fully stocked fridges and unlimited amounts of Vega products at our disposal at all times. She suggested me trying this little quinoa mixture that was a healthy clean snack that would also fill me up until dinner – I was intrigued.
You can really make this little powerbowl whatever you want it to be, but here is what I generally put in it.
1/2-1cup quinoa (depending how carb heavy you want it to be, and also how big you want it to be!)
1/2 cup chopped or shredded carrots
1/2 cup chopped celery
1 cup chopped kale
** I also recommend adding in broccoli and/or cauliflower if available – chickpeas are always a welcome addition too~!
The sauce consists of:
1 tbsp sriracha (more or less to taste)
1 tbsp tamari
1 tbsp tahini (peanut butter also works)
Microwave your bowl for 1 min or until heated throughout and ENJOY! 🙂
