So these little babies were an accident.
I was making Spicy Peanut Kale Chips and ended up with too much sauce (because I don’t follow recipes very well)
I put as much as I felt necessary on the kale chips and had a decent amount left over.
There were some beautiful little brussels lookin right at me in the fridge, so I chopped those suckers up and mixed em with the peanut sauce. How bad could it be right? NOTTTTTTTTTT bad at all my friends. It was so delicious I took a page from my hubbies book and a LICKED the plate. Ya, I did that.
So what when into them?
I would LOVE to give you exact portions, but I don’t have them. I will try to get better with this, promise! But do it to taste and see what you come up with.
You’ll need approximately:
2 tbsps peanut butter
2 tbsps low sodium tamari
1 tbsp lime juice
1/2 to 1 clove garlic (depending how bad you want to smell for the evening)
siracha to taste (depending how spicy you like)
pinch of chili flakes (also to taste depending on spice tolerance)
1/2 tsp of ginger powder (or a chunk of fresh ginger)
Water – as much as you need for the paste to blend properly
– it should be smooth enough to pour
Put a little coconut oil in a pan on medium heat
Throw in the brussels once they’re washed and cut in half
Let them cook in the coconut oil for the first 3 minutes or so until they’re slightly browning
Pour on peanut butter mixture and cook for another 2-3 minutes or until PB mix turns slightly carmelized
